 Mexican Salad with an Indian Touch

Ingredients:

  • 1 cup cooked black beans

  • 1 cup cooked corn kernels

  • 1 cup cherry tomatoes, halved

  • 1 small red onion, finely chopped

  • 1 small cucumber, diced

  • 1 avocado, diced

  • 1 green chilli, finely chopped (adjust to taste)

  • 1/4 cup fresh cilantro leaves, chopped

  • Juice of 1 lime

  • 1 tsp chaat masala (Indian spice blend)

  • Salt, to taste

  • Tortilla chips, for serving

Instructions:

  1. In a large bowl, combine the cooked black beans, corn kernels, cherry tomatoes, red onion, cucumber, avocado, green chilli, and cilantro.

  2. Squeeze the lime juice over the salad and toss gently to mix.

  3. Sprinkle chaat masala and salt over the salad and toss again to ensure the flavours are evenly distributed.

  4. Let the salad sit for 10-15 minutes to allow the flavours to meld together.

  5. Serve the Mexican salad with an Indian touch chilled or at room temperature.

  6. Garnish with additional cilantro leaves if desired.

  7. Accompany the salad with tortilla chips for a crunchy element.
