chole bhature is a popular north indian dish with spicy chickpeas (chole) and deep-fried bread (bhature). here's the recipe with ingredients:
For the Chole:
1 cup dried chickpeas, soaked overnight
2 tbsp oil
1 tsp cumin seeds
2 onions, finely chopped
1 tbsp ginger-garlic paste
2 tomatoes, finely chopped
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
1 tsp turmeric powder
Salt, to taste
1 tsp red chilli powder (adjust to taste)
1 tsp dried mango powder (amchur)
2 cups water
Chopped coriander leaves, for garnish
For the Bhature:
2 cups all-purpose flour (maida)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tbsp oil
1/2 cup plain yoghurt
Water, as needed for kneading
Oil, for deep frying
Instructions:
Drain and rinse the soaked chickpeas. In a pressure cooker, add the chickpeas, water, and salt. Cook for 15-20 minutes or until tender.
In a separate pan, heat the oil and add cumin seeds. Once they splutter, add the onions and sauté until golden brown. Add the ginger-garlic paste and sauté for another minute.
Add the chopped tomatoes and cook until they turn mushy. Add the coriander powder, cumin powder, garam masala, turmeric powder, red chilli powder, and dried mango powder. Mix well and cook for 2-3 minutes.
Add the cooked chickpeas along with the water and mix well. Bring to a boil and then simmer for 10-15 minutes.
For the Bhature, mix together flour, baking powder, baking soda, salt, and oil. Add yoghurt and mix well. Add water as needed to make a soft dough. Knead for 5-10 minutes.
Divide the dough into small balls and roll them out into circles.
Heat oil in a deep frying pan. Once hot, add the rolled bhature and fry until golden brown. Drain on paper towels.
Serve the hot chole with the bhature and garnish with chopped coriander leaves. Enjoy!
